This apple crisp is healthy enough to qualify as a veggie/fruit serving. (Ok, perhaps not, but I have rationalized it that way myself.) :-)

Gather the following:

2 liter casserole pan/dish with lid.

Mixing bowl

bullet

Apples (enough to mostly fill the casserole pan, use tart baking apples and not the sweet)

bullet

Apple Juice (I prefer the mildly pasteurized 'cloudy' form)

bullet

Sugar

bullet

Brown Sugar

bullet

Flour

bullet

Oatmeal

bullet

Walnuts

bullet

Cinnamon

bullet

Nutmeg

bullet

Cooking oil

Preparation:

  1. Preheat oven to 380

  2. Peel, core and slice the apples. You should have enough to fill the dish to within 0.5 to 1 inch from top.

  3. Add apple juice to apples to about 3/4 full of dish.

  4. In mixing bowl, combine/mix:

    3 Tablespoons Sugar

    bullet

    1 Tablespoon Flour

    bullet

    3/4 Cup Oatmeal

    bullet

    1.5 Teaspoon Nutmeg

    bullet

    3 Teaspoon Cinnamon

    bullet

     

  5. Add combined mix to apples and juice in the dish. Mix up so apples are evenly coated.

  6. In mixing bowl combine/mix:

    1/2 Cup Oatmeal

    bullet

    1/2 Cup Brown Sugar

    bullet

    2 Tablespoon Flour

    bullet

    2 Teaspoon Cinnamon

    bullet

    1 Cup Walnuts

  7. Distribute mixture over top of apple mix. Pat or pack down as needed.

  8. Add a little oil over top of mixture to wet it down a little. (2 tablespoon or so)

  9. Bake at 380 for about 1 hour.

  10. Let cool.

Notes:

This usually tastes better the next day after the flavors have melded.

If your apples are a little sweeter, you can cut back on the sugar and add a little lemon to tarten it up.
